Healthy Cookie Crumb Ice Cream!

 

Homemade ice cream is one of my absolute favorite desserts, and I want to teach you how to make it with or without an ice cream maker!

First, you only need 4 ingredients! Coconut milk, sweetener of your choice (anything that is a 1:1 sugar substitute!), salt, and flavoring of choice (vanilla, peanut butter, etc.).

Ingredients:

4 cups coconut milk

2/3 cup sweetener

1/2 tsp kosher salt

1 tbsp vanilla extract (for vanilla flavored ice cream)

1 RAIZE Cookie Pack

Instructions:

With an ice cream maker

1. Mix all ingredients in a saucepan and bring to a simmer to homogenize the coconut milk

2. Let cool in the fridge for 2 hours

3. Churn according to your ice cream maker's instructions

4. Crumble the cookies, and mix them in!

4. Freeze for at least 4 hours, and serve!

 

Without an ice cream maker

1. Mix all ingredients in a saucepan and bring to a simmer to homogenize the coconut milk

2. Freeze in an ice cube tray until completely frozen

3. Blend frozen cubes until smooth

4. Crumble up the cookies

5. Mix in the cookie pieces and serve!
