Healthy Cookie-Based Cupcakes!

The best way to eat a cupcake is with a cookie on the bottom, no question. Try out this recipe with our Chocolate Chip Pecan Cookies and find out how delicious they are!

Ingredients:

 

Cupcake Batter

Keto Cake Mix

3 eggs

3 tbsp melted butter

½ cup water

 

Frosting

1 cup unsalted butter

2 cups powdered sweetener of choice

1 tbsp vanilla extract

1 tsp salt

 

Cookie Base

1 box Chocolate Chip Pecan Cookies

Instructions:

  1. Line a cupcake pan with 12 cupcake liners.
  2. Crush the Two Chip cookies, reserve some crumbs for topping, and press the crumbs into the liners to form a base.
  3. Whisk together the cupcake batter ingredients, and fill the cupcake liners evenly with the batter.
  4. Bake according to the cake mix instructions, and cool to room temperature.
  5. Cream the frosting ingredients together until light and fluffy.
  6. Pipe the frosting on top of the cooled cupcakes.
  7. Sprinkle remaining cookie crumbs on top.
  8. Enjoy!
