Cheesecake Filling

1 cup heavy cream

16 oz cream cheese

1 cup sweetener

1/2 tbsp vanilla extract

Cookie Base

1 box Chocolate Chip Pecan Cookies 


  1. Line a cupcake pan with 12 cupcake liners.
  2. Crush the Chocolate Chip Pecan cookies and reserve some crumbs for topping.
  3. Press the mixture into the bottom of the cupcake liners.
  4. Whisk together the cheesecake filling ingredients, and fill the cupcake liners evenly with the filling.
  5. Sprinkle the crumbled cookie topping on the individual cheesecakes
  6. Place the cupcake tray in the fridge for 2 hours
  7. Enjoy!
